Cheryl’s Famous cheese steak spring rolls with homemade spicy ketchup
For the spring rolls”
1 medium onion, julienne
1 jalapeno sliced thin with seeds
1 # shaved ribeye of beef
Salt and pepper to taste
20 slices American cheese
20 spring rolls wrappers
1 whole egg
In a large skillet sauté the onions until golden brown and add the jalapenos and cook throughout. While on high heat add blended oil to the pan and add the shaved ribeye, when cooking the meat you want to break it up with a spatula into very small pieces. Season with salt and pepper remove from pan and place on a sheet pan to cool. When the meat is cold it’s time to roll. Lay the spring roll wrappers out on a clean dry work surface, while not working with them make sure to cover with a damp towel not to let them dry out. Fold the American cheese in half to make a triangle and place at one corner of the wrapper, place about a tablespoon of the beef mixture directly on the cheese. When rolling the spring rolls take the bottom over the mix and fold in the sides. Brush the top corner with the egg wash and continue to roll. Reserve in the refrigerator for up to one day or tightly wrap and freeze for 6 months. To cook the spring rolls preheat deep fat fryer to 360 and fry until golden brown, let drain and enjoy or cook in 350 degree oven until crispy.
