Smoked Gouda Mac and cheese
1# elbow pasta, cooked al dente
1 medium yellow onion, diced small
1 qt. heavy cream
1.5 cup shredded aged smoked Gouda cheese
.25 cup shredded parmesan cheese
Salt and white pepper to taste
Tabasco as needed (to your liking)
.5 cup panko bread crumbs
2 tablespoon chopped Italian parsley
Preheat oven to 350
In a large pot of salted boiling water cook your pasta, drain, and toss with olive oil and reserve.
In a large pot sweat onions with vegetable oil until translucent add the heavy cream and reduce by at least half. When the cream is reduced whisk in the Gouda and the parmesan cheese season with salt, pepper and Tabasco. Taste and adjust to your taste, add the pasta to the pot and mix. Remove mix from pot into a baking dish. Mix panko with the parsley, pinch salt and pepper. Top the mac and cheese with the panko mixture and bake for about 10-15 minutes until crumbs are golden brown. Let set for 10 minutes before serving.
