Waylon's Meatloaf
Yield: 1 loaf
Preheat oven to 350
Ingredients:
1 # lean ground beef
1 ½ cup Italian seasoned bread crumbs
½ cup heavy cream
¾ cup ketchup
4 cloves garlic, minced
½ cup celery, small dice
½ cup Spanish onions, small dice
2 eggs
2 tablespoons fresh Italian parsley, finely chopped
1 tablespoon fresh oregano, finely chopped
1 teaspoon ground cumin
½ teaspoon cayenne pepper
Tabasco to taste
Salt and pepper to taste
Method:
Sautee onions and celery until onions are translucent add the garlic and continue to cook about 1 minute. Add the heavy cream, ketchup, Tabasco and cumin, let cool. In a mixer combine the bread crumbs and the egg until mixed completely, add the cream mix and incorporate. Add the remaining ingredients and mix until combined. Form the loaf on a baking sheet and brush the top with ketchup. Cook at 350 for about 1 hour. Serve with a mushroom sauce or just more ketchup.
